Methi Chicken



ALL YOU NEED:

2 cups Methi leaves
1 cup Spinach leaves (optional)
1 onion (medium)
2 tomatoes (medium)
1 tbsp garlic and ginger paste (each)
2 chicken breast washed and cut 
2 chicken drumsticks ( I love with bone pieces you can substitute it with boneless chicken)
1 chopped green chili
1 tbsp oil
1 tsp cumin seeds
Salt to taste
1 tsp Garam masala

METHOD:

Wash Methi and spinach (optinal) leaves thoroughly....




Heat oil in a skillet and add cumin seeds...soon add onions and cook them till brown/translucent...


Add green chillies and tomatoes and cover it with a lid let the tomatoes cook well...


Add ginger and garlic paste....


and finally add chicken and cover it again for 2 mins...

P.S. I cook with bone chicken in a pressure cooker and then add it to the masala...


After few mins add the methi and spinach leaves and cover it for a while...


Do remember to add salt and garam masala and a little red chili powder (optional)


Cover it with a lid and keep stirring it frequently...
I did add the drumstick at this time...


Once the chicken is cooked and the leaves are kind of soggy enough to eat your chicken's ready... I did keep some curry in it to eat with rice..:D

Watermelon Salsa

This one is really simple and an amazing snack/ breakfast
Serves 2


All you need:

1/2 watermelon (small)
1 small onion chopped (make sure onion is very small)
few cherry tomatoes
1/2 tomato chopped
handful of chopped cilantro
2 tbsp mint leaves chopped
sea salt to taste
chunky chaat masala/ black salt (for taste)
1-2 green chillies (optional)
1 mango chopped (optional)

METHOD:

Add all the ingredients one by one in a bowl... Yes right, it's that simple...;)

Then add salt very little amount and chaat masala/ black salt (for taste)

Mix it real good and it's ready to be served..:)

Best when served cold...
