Low Carb Carrot Cupcakes



Almond flour cup cakes are not only low carb but taste delicious. I added a little bit of coconut flour so that the cup cakes are not to dense.

INGREDIENTS:

CUPCAKES:
2 cups Almond flour
1/2 cup coconut flour
2.5 cups grated carrot
1 tbsp Baking powder
1 tbsp cinnamon powder
1 tsp salt
3/4 cup butter or oil of preference
3/4 cup erythritol/monk fruit
4 eggs

CREAM CHEESE FROSTING:
4 oz cream cheese (room temp) or Greek yogurt 
2 tbsp butter (room temp)
1 tsp vanilla essence
1/2 cup erythritol/monk fruit
2 tbsp heavy cream or 1.5 tbsp milk

METHOD:

1. Mix all the dry ingredients except sugar in a bowl and keep aside.

2. Mix butter and sugar together until properly mixed and start adding 1 egg at a time. 

3. Add in all the wet ingredients together with dry ingredients and then add the grated carrot.

4. Season a muffin tray and cook them for 15-20 mins at 350 F. Let the cup cakes cool down.

5. Meanwhile make your cream cheese frosting by adding butter and cream cheese(greek yogurt) together and mixing it. 

6. Add erythritol, vanilla essence and heavy cream (or milk) and get the pipping bag ready.

7. When the cup cakes cool down you can start icing them. 

This recipe makes: 18 cup cakes

Gajar ka Halwa in IP

Things you will need:

5 lbs Carrots 
8 oz Condensed milk can 
3-4 cardamom (optional)
1/2 cup ghee (you can alter accordingly)
1 cup water
2-3 cups milk
1 cup khoya
Chopped almonds, cashews, pistachios(optional)
Few raisins (optional)


METHOD:

Peal, wash and grate you carrots in a food processor. 
Turn on IP on saute mode and add in the carrots with water, 2 tbsp ghee, milk and cardamom. Pressure cook with lid on for 10 mins. Quick release.

Add in the condensed milk can and khoya.
Keep stirring it frequently on saute mode so that it does not stick on the bottom of the pan. You need to get rid of all the liquid (about 15-30 mins), once you do that. Add in more ghee. Garnish with nuts.

Meethi Sevaiyan (Sweet Vermicelli)

This is my version of vermicelli, I love it when it's cold and lots of milk...I have seen many people who like it to be dry (not too much milk) if u r one of them, then please use milk as needed.

ALL YOU NEED:

1 cup vermicelli
1 tbsp ghee
2 green cardamom
1/2 cup sugar
3 cups milk
Dry fruits (almonds and raisins) for garnish


METHOD:

Heat ghee in a pan and roast vermicelli...


Once it starts to get brown add cardamom and keep stirring for another min...


Add milk and bring it to boil


Add sugar and garnish with dry fruits...


 Simple and delicious...


Chill in refrigerator before serving or eat it warm :D

Apple cinnamon Muffins

Super easy and delicious muffin recipe :)


ALL YOU NEED:

2 cups All purpose flour
1 cup sugar
1 tbsp Baking powder
1 tbsp vanilla essence
1 large egg
1/4 cup vegetable oil/canola oil
1/2 cup milk (ur choice skim,2%,whole)
1 tbsp cinnamon powder
1 apple pealed and grated
2 tbsp sugar

METHOD:

Preheat oven to 400 F
 
Take a bowl with grated apple, 2 tbsp sugar and cinnamon, keep it aside.

In another big bowl add all the dry ingredients (1st 3 in the list above). Mix them well and take about 1/2 cup of the mixed ingredients and add to the bowl with apple (set it aside until needed again)

In a third bowl whisk the egg with a hand mixer until nice and fluffy, add vanilla essence and oil to it, mix again. :)

Add the egg mixture to the dry ingredients, mix them and then add apple mixture and milk. Using a baking spatula mix all the ingredients together nicely. 

Scoop the mixture to the muffin tin with a liner and bake for 20 mins. This recipe makes medium sized 12 muffins :D



You won't regret! These are absolutely amazing..:D



Sprinkle some powder sugar if u want :D

Babru

This is my childhood favorite till date..!! A lot of people call it gulgule as well..!!

THINGS YOU NEED:
1 1/2 cup wheat flour
1 cup sugar (can be adjusted if you want it a bit more on the sweeter side)
1 tbsp fennel seeds

Oil to fry

METHOD:
Mix the three ingredients with water, peanut butter consistency...


Now heat oil for frying in a kadhai/pan and either with your hands or a big spoon scoop out the batter and fry it in the oil, add one by one forming a random shape.


There you go, fry on a medium heat to cook it from the inside for few minutes and high heat to get it brown from the outside...
I take them out on a paper towel, not to soak the oil but my guilt of eating fry food.


Ready to be served!! :)

Apple Pie

This was my first time making a pie, turned out pretty well...


ALL YOU NEED:
Butter
1/2 cup brown sugar
1/2 cup sugar
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
6-8 granny smith apples

2x Pillsbury pie crust (frozen)

METHOD:

For Filling:

Melt butter in a pan



Add brown sugar, regular sugar, cinnamon and nutmeg..



Add about 2 tbsp of water, bring it to boil and turn off the heat. 


Peal and slice all the apples..


Preheat over to 425, place the pie crust on the pie pan...


Place the apples 


Pour in the caramel...


Cover the pie with another pie sheet...


Make sure to pierce 4 holes in the center for air...


I used some cookie cutters and pasted these fun shapes, this is absolutely optional.. 
Bake it on 425 for 15 mins, lower the temperature to 325, bake it for 35-40 mins or until the apples are cooked.


Make sure to seal the sides really well, else it'll end up like mine... 



Ready to be served with Vanilla ice cream...:D

Blueberry Muffins

INGREDIENTS:

Dry Ingredients:
2 cups All purpose flour
1 tsp baking powder
1 cup of Sugar
Pinch of salt

Wet Ingredients:
1 stick of butter
 2 eggs
1 tsp vanilla extract
2 tsp milk 

Fresh Blueberries
Cinnamon powder
1 tsp sugar

METHOD:

Pre heat the oven to 450 degrees 

Combine all the dry ingredients in a bowl...
and all the wet ingredients in another.. whisking 1 egg at a time...

Combine them together...


Add the blueberries and mix it...


I was out of muffin liners but was craving for these so I used wax paper cut them in quarters and placed them in the muffin dish...;)
Put the batter in using an ice cream scoop or a spoon...


Top each muffin with cinnamon powder and sugar (just a pinch of each)


Bake it at 450 degrees for 15 mins...
and walaahhh...!!






This recipe makes 12 muffins :D

Naan Khatai


ALL YOU NEED:

1/2 cup butter (salted / unsalted)
1 cup Powdered Sugar
2 Pinches of cardamon powder
2 pinches of nutmeg powder
1 cup all purpose flour
1/2 tsp baking powder
2 tsp Milk (optional)
Almonds or any nuts you want 

METHOD:

Take room temperature butter in a bowl and mix it with sugar...


Mix well to form a creamy thingy...:D


Stir in cardamon and nutmeg powder..


In another bowl add flour and baking powder, mix well...


Now mix the flour with creamy batter in batches...



Stir in some flour little by little and mix it well...


1's its mixed add milk (only if you cannot form a dough)


Form a nice dough cover it with cellophane paper and keep it aside for 20 mins...


The dough will be really soft form small round shaped balls...
keep them at a distance..:D


Add almonds/ nuts on top..:D


Preheat oven to 300 degree fahrenheit and bake the cookies for 20-25 min depending on your oven...:D
Don't let the cookies get brown, cool them before serving...
