Pesto Pasta Salad

ALL YOU NEED:

2 cups boiled pasta
1 cup cooked chickpeas
Basil Pesto
Salt and pepper to taste

Vegetables for your salad:
Bell peppers
Carrots
Cherry tomatoes
Salad Mix

I also cooked some chicken in pesto sauce and added to this (optional)

METHOD:

Put everything in a salad bowl 





Add pesto according to your taste, and it's ready to be served...

Green chicken kababs

I've been making theses for a while now and I think these kababs have become my new love just because they r super easy make.
There can be various versions of it, this is my version I'm sharing hope you'll will enjoy it.

ALL YOU NEED:

2 Chicken Breasts (washed and cut into pieces)
1/2 cup mint leaves
1 cup spinach leaves
1 cup cilantro
3-4 green chillies (depending on how hot they are and how hot you want it to be)
Ginger
5-6 cloves Garlic
2 tbsp Plain Yogurt
Salt to taste
1 tbsp Garam Masala
2 tbsp olive oil

Lemon for Garnish

METHOD:

This is going to be really easy trust me...
Take all the ingredients except Chicken and blend them...



Wash the chicken thoroughly and add this marinade to it. I would recommend refrigerating it for atleast an hour, if you can do more that'll be good too... 


When ready to eat, heat a grill pan with generous amount of olive oil (or any oil you cook with) and grill the marinated chicken...


Let the chicken cook plus get some grill marks...


Squeeze a lemon on top and its ready to be served!!

Oregano Chicken

This recipe is very special because one my oldest friend shared it with me. So, I gave it a try and ended well, very delicious and super easy.

ALL YOU NEED:

2 chicken breasts
2 inch butter for cooking
Oregano (be generous)
1 tbsp garam masala
Salt to taste
Lemon to garnish

Spices needed:
3 green cardamoms
1 black cardamoms
1 inch cinnamon stick
1 star anise
1 tsp cumin seeds

METHOD:

In a pan heat butter and add all the spices, cook for a minute and add chicken...


Add garam masala, salt and oregano...


Add about 1/2 cup water and let it cook until the water dries...



There you go it's ready. Squeeze a lemon before serving..




This makes an amazing appetizer, you can use chicken wings instead of boneless. I tried it, loved it, now it's your turn!!

Grilled Tandoori Fish

I named it Tandoori fish because of its ingredients...;) 

Ingredients:
4 Tilapia filets (You can use whatever kind of fish you want)
1 tbsp each Ginger/Garlic Paste 
2 tbsp Mustard oil (optional)
3 tbsp yogurt
1 chopped green chili
Salt to taste
1/2 tsp Garam Masala
2 tsp Kashmiri Mirch (for color)
Cilantro
Mint leaves

Method:
Thaw the fish and marinate in Vinegar and salt for 10 mins, this removes the fishy smell...


In a bowl add the ingredients... I started with Ginger/Garlic, green chili...


Kashmiri Mirch, Mustard oil...


Add the yogurt, cilantro and mint leaves and Mix well... Marinate for 1/2 an hour...


In a Grilling Pan, Spray some oil and place the Marinated fish...


Cook about 5-7 mins each side (or until fully cooked & golden brown)


Squeeze Half a lemon and enjoy it with a drink...;)

Watermelon Salsa

This one is really simple and an amazing snack/ breakfast
Serves 2


All you need:

1/2 watermelon (small)
1 small onion chopped (make sure onion is very small)
few cherry tomatoes
1/2 tomato chopped
handful of chopped cilantro
2 tbsp mint leaves chopped
sea salt to taste
chunky chaat masala/ black salt (for taste)
1-2 green chillies (optional)
1 mango chopped (optional)

METHOD:

Add all the ingredients one by one in a bowl... Yes right, it's that simple...;)

Then add salt very little amount and chaat masala/ black salt (for taste)

Mix it real good and it's ready to be served..:)

Best when served cold...

Cream Chicken

I used the cornish hen for this recipe but you may use whatever chicken you like...:D


ALL YOU NEED:

Pieces of Chicken
2 tbsp sour Cream
1 cup plain Yogurt
Salt & Pepper to taste
2 tsp Oil

METHOD:

Heat oil in a pan and add chicken... 


Let the chicken cook well...


Stir in the sour cream...

Cover the lid for 5 min...:D


Remove the lid sprinkle pepper...


All you need to do now is to let it dry a little...(about 1-2 min)


Add Yogurt and let it come to a boil then add in the salt...


Now let it dry completely...
Its a dry chicken not with gravy


Make sure you scratch the bottom as it'll start sticking to the bottom..


Once it's dry it's ready to be served...:D

Honey Chili Potatoes

Another quick and delicious Indian Chinese recipe which I wanted to share... So here it goes..:D


ALL YOU NEED:

3-4 Large potatoes
1 tsp chopped ginger and garlic each
2 tbsp Honey
1 tbsp Chili flakes (how hot u want)
2 chilies (optional, depending on how spicy you want it to be)
1/2 cup cube shape chopped onions (little bigger than a normal size)
1/2 cup Green bell pepper chopped same as onions
1 tsp vinegar
1 tsp soya sauce
2 tbsp ketchup/tomato puree
2 tbsp Hot & sweet ketchup
Salt to taste
Garnishing with cilantro, green onion and sesame seeds
oil to fry

METHOD:

Cut the potatoes in french fries shape and deep Fry them...


Let them fry till they start getting golden brown, take them out on a tissue paper...:D



In another pan heat 2 tsp oil and add ginger and garlic, green chilies, chili flakes, cook ...


Stir in honey, cook for a min or so and add vinegar and soya sauce...


Now add in the onions and green bell peppers (i cut them little smaller coz I like it that way)


Stir in the ketchup and tangy sauce.
if using tomato puree instead of ketchup cook for a min  or two...


Add the fried potatoes when it's time to serve...


Mix it well and add salt..:D


Ready to be served..:D
Garnish with Cilantro, sesame seeds ND green onions chopped .:D
