Egg Fry Sandwich

A really quick and amazing breakfast recipe. I saw it online few days ago and had to try...;) Hope you all like it..:D


ALL YOU NEED:

2 Bread slices (any bread you like)
1 Egg
Butter
Salt to taste
1/2 chopped green chili
1 tsp finely chopped cilantro
2 tsp Mozzarella cheese
1 tsp cottage cheese/ any dressing (I used ranch it worked)

METHOD:

In a bowl mix mozzarella cheese, Ranch, green chili, cilantro and pinch of salt...
Mix this and keep it aside...


Take 2 slices of bread and make a circle in the center....


You can either use a knife or a small bowl to cut a perfect shape...:D


Spread butter on one side of each bread...


Something like this...


Spread the cheese mixture on the other side and close the bread, so that it looks like a sandwich... Butter on the outer sides and cheese filling inside...:D



Place it on a non stick pan (no oil)


Break an egg in the hole and let it cook on simmer heat....


Also add some salt on the egg...


Turn the bread after cooking it for a while on simmer.. you'll see egg is cooked and the bread is crispy... Let the other side cook for a little while too until the egg is totaly cooked from the inside...:D


Once done it's ready to plate...:D


I cut it into half to check if the egg's cooked from the inside..:D


Cooked and deliciously crunchy...:D

Egg Curry


All You Need:

6 boiled eggs
1 Bay leaf
Cumin seeds
2-3 black and green Cardamon
1 Onion
1/2 cup Tomato puree or 2-3 tomatoes pureed
1/2 tsp Red chili powder
1 tbsp each Ginger garlic paste
Salt to paste
Olive oil

METHOD:

In a pan add 4 tsp oil and fry the eggs...


 Keep them aside..

In the same pan heat 2 tsp oil in a pan, add cumin seeds, cardamons, bay leaf...


let them cook for a little while, grind the onion and add the paste...



Cook until brown and add tomato puree or pureed tomatoes and cook until oil separates..


Add salt, red chili powder, ginger and garlic paste..
Add 2 1/2 or 3 cup water... 


Add the eggs to the curry, Close the lid for 5-7 min and let the curry boil...


Remove the lid cook it for few more minutes or until curry thickens to your desire...

Egg Rolls

Breakfast Item:


All You Need:

2 Chapatis
2 eggs
1/2 cup onions chopped
1/2 tsp crushed dry mint
red chili powder
Salt and pepper to taste

Serves: 1 

METHOD:

Cook 2 Chapatis (half done from one side)


Beat the eggs with other seasonings in a bowl...


Heat a pan and add 1 tsp olive oil and pour half of the egg mixture, spread evenly and wait for the bottom to cook...


Once cooked, put the chapattis on the top of the egg...(making sure the uncooked part is on the top)


Flip it over...


Now fold one end and then the other...


Flip it over again and cook the other side for not more than a min...


Do the same for the other chapati...and enjoy..:D

Scrambled Eggs

All You Need:

8 Eggs
1 Chopped Onion
1 Chopped Tomato
1 chopped green bell pepper
2 Chopped Green Chilies
2 chopped green onion
Cumin seeds
1/2 tsp garam masala
1 tsp Herbs
1 tsp red chili powder
1 tsp Crushed Mint
Chopped Cilantro leaves
Salt & Pepper

METHOD:

In a pan heat 2 tsp oil, add cumin seeds and wait for them to pop then add onions to it and cook until brown...


Now add green onion & bell peppers to it cook well...:)


Add tomatoes and cook them till they are soggy, Mix them with the onion, bell pepper mixture



When done break the eggs in the pan...


Mix them well and add all the rest of the spices ( Dry mint, Herbs, Red chili powder, Garam Masala, Salt & Pepper) 


Wait for the eggs to get cooked and water to dry when done eggs are ready to eat...:)


SERVES: 4

Vegetable Strata


(10/27/12)
Saturdays and Sundays are lazy I generally wake up late and feel like making something which will get me through the day... So here a Brunch recipe for a perfect Saturday morning...:)

Ingredients:

8 Eggs
10 slices of bread sliced into cubes (I used whole grain and white bread)
2 cups milk
4 tsp olive oil
Parmesan Cheese
Mozzarella Cheese
Grated Parmesan 

Veggies:
boiled & chopped brocolli
2 chopped carrots
2 chopped celery
1 chopped onion
1 chopped tomato / sliced sunrise tomatoes
Freshly chopped  cilantro leaves
3 green chilies

Spices:
1/2 tsp Thyme
Salt & Pepper to taste
1/2 tsp Italian seasoning
1/2 tsp Herbs

Method:

In a pan heat 1 tsp oil and add onions, saute until they are brown and then add carrots and celery and cook for about 3-4 min then transfer in another bowl & let them cool for a little while


Oil a baking dish and arrange the bread cubes (save some for the end layer)


Top it up with veggies layer, add tomatoes, broccoli as well....cover it up with the left over bread cubes


Now, in a large bowl beat the eggs, add all the spices (Mentioned above), green chilies, cilantro leaves and milk beat it with a hand mixer till its totally incorporated...


Pour the egg mixture over the bread making sure it spreads evenly...


Top it up with Parmesan, mozzrella cheese and little olive oil..


Cover it up and refrigerate it overnight or atleast 8 hrs... then bake it at 350 degrees for 50 min or an hour or till the top surface is brown...:)

Breakfast Recipe

Garden Omelette (10/26/12)

Every morning I struggle for breakfast, it's so confusing what to have and what not to have.. Something that is filling but at the same time healthy...I can understand it's a challenge to make different breakfast every morning specially when you're already late for work..(I wake up late) it feels like grabbing something real quick...!! Omelettes are simple, quick and to make them healthy add some veggies to it...:D


All you need:

3 eggs
1/2 chopped tomato
1 chopped celery
chopped broccoli
chopped capcicum
Any other vegetable you want
Salt & pepper to taste
1/2 tsp dry crushed mint
Pinch of red chili powder
1 tsp milk
2 tsp olive oil

Method:

In a pan add all the chopped veggies and cook them a little...:) keep them aside and add oil to the same pan...
In a bowl beat the eggs and add the seasonings i.e. dry crushed mint, red chili powder, salt & pepper... add milk (just to make it more fluffy) whisk it as much as you can... the more the better..:)
Add the egg mixture to the hot pan and let it cook from the bottom...


Once it's cooked add all the cooked veggies to one side of the omelette..:)

Now fold the omelette...

It can be a little messy :P lol... now squeeze it so that if there is any uncooked part inside the omelette it'll get cooked..:) and turn to the other side and squeeze a little more..:D 


Add fresh cilantro leaves over the top and njoy it with butter Toast and a glass of Milk..:)



P.S. you can add cheese if you want i didn't...:P

Mom's Recipe: Simple n Yummy Eggs

Eggs (08/10/2012)

Ingredients:

1 sliced Onion
2 chopped Tomatoes
4 eggs
Cumin seeds
Salt & Pepper to taste
1/2 tsp Chili powder
Mint leaves
Cilantro leaves
1 tsp olive oil

Method:

In a pan heat oil and add cumin seeds. Add onions after few seconds. Cook until golden brown and soft...


Add tomatoes on the other side, cover the pan and let the tomatoes get soggy...


Mash the tomatoes and mix them with the onions. Add salt, pepper & red chili powder, Mix it well and evenly spread this Masala in the pan.
Now,  break the eggs 1 at a time over this Masala (Do Not Scramble the eggs)..


(I had some beaten eggs so I poured them too but it's not necessary instead you can use more eggs)

Sprinkle little salt, red chili powder (optional)


Cover it with a lid and let the eggs cook until the york is all white (you'll see what I'm trying to say here) It should take about 5-10 min on low heat...


Garnish it with dry mint/ fresh mint leaves and cilantro.


Pretty Simple..;) Enjoy them with Bread or Roti..:)
