Sambar

Fresh sambar from scratch..:D

All You Need:

1 cup Toor Dal (washed thoroughly)
1 tsp Tamarind soaked in 1/2 cup water for atleast 3-4 hrs
Veggies (Carrots, onions, tomatoes, eggplant etc)
2-3 tsp Sambar Powder
1-2 tsp Mango powder (Amchur) optional
5-6 curry leaves (kadi patta)
2 whole red chili
1/2 tsp mustard seeds (sarso) 
2 tsp olive oil  
Salt to taste
1/2 tsp Turmeric powder
1 tsp Red Chili powder

METHOD:

Pressure cook the Dal with salt and turmeric powder (2-3 whistles should be good enough)

TADKA:
Heat oil in a pan, add curry leaves, whole red chili and mustard seeds... let them cook for few seconds and then add all the veggies you want....:D


Add the tamarind water (strained) once the veggies are properly cooked


Add Sambar Masala and salt.


Bring it to boil and transfer it to the pressure cooker with dal. 


Your Sambar is ready to be served...:D 




Garnish it with Cilantro leaves and enjoy them with Idlis..:D

Kadhai Chicken


All You Need:

4 Chicken legs or you can use any other piece you want
4 Boiled eggs (Optional)
1 sliced onion
1 green bell pepper
2 tomatoes
3 garlic cloves
Ginger
Salt to taste
1 tsp Garam Masala
1/2 tsp Red chili powder
2 tsp olive oil
1/2 tsp cumin seeds

METHOD:

In a Pan (Kadhai) add oil and cumin seeds, as soon as the seeds pop add the chicken and cover it with a lid... Cook the chicken until it's tender...


Once cooked keep it aside and in the same pan add onions and saute them....


In a mixer/grinder add the tomatoes, garlic, ginger and green chili... Grind them to form a thin paste and add it to the pan...


Cook the tomato paste for a while and then mix it with the onions.... Add the cooked Chicken to this masala...


Also add the seasonings (salt, red chili powder and garam masala)


Mix well and add Green Bell pepper...


Close the lid and let it cook for another 10-15 minutes....

I also Added Boiled eggs (Just for the flavor)


Mix it well, Garnish it with fresh cilantro leaves and your Kadhai Chicken is ready to be served...:D

Chicken Kababs

To start with I would really like to apologize for not writing the blog for so long...Actually went on a vacation to my parents in India...:D Came back and wasn't feeling that well but I'm all good now..:D

The other day I was watching a movie and saw <Kababs> and thought of making it the next day...:D

All You Need:

2 Chicken breasts
1 tsp garlic paste
1 tsp ginger paste
2 green Chilies
Freshly chopped Cilantro leaves
2 tsp olive oil
Skewers

Seasoning:
Salt to taste
1/2 tsp Red chili powder

METHOD:

It's really simple, Chop the chicken breast into small pieces (like kababs)...
Grind all the other ingredients and mix them with the chicken (Nicely spread them) 
Add Salt, red chili powder

Marinate it for 2-3 hrs (or long). Arrange these chicken pieces into the skewer and preheat the oven to 350 degrees...


 Bake the chicken  for 30 mins or until cooked...


Really simple to make and delicious to eat... I enjoyed them with homemade Garlic naan (Indian Bread)
