Blueberry Muffins

INGREDIENTS:

Dry Ingredients:
2 cups All purpose flour
1 tsp baking powder
1 cup of Sugar
Pinch of salt

Wet Ingredients:
1 stick of butter
 2 eggs
1 tsp vanilla extract
2 tsp milk 

Fresh Blueberries
Cinnamon powder
1 tsp sugar

METHOD:

Pre heat the oven to 450 degrees 

Combine all the dry ingredients in a bowl...
and all the wet ingredients in another.. whisking 1 egg at a time...

Combine them together...


Add the blueberries and mix it...


I was out of muffin liners but was craving for these so I used wax paper cut them in quarters and placed them in the muffin dish...;)
Put the batter in using an ice cream scoop or a spoon...


Top each muffin with cinnamon powder and sugar (just a pinch of each)


Bake it at 450 degrees for 15 mins...
and walaahhh...!!






This recipe makes 12 muffins :D

Grilled Tandoori Fish

I named it Tandoori fish because of its ingredients...;) 

Ingredients:
4 Tilapia filets (You can use whatever kind of fish you want)
1 tbsp each Ginger/Garlic Paste 
2 tbsp Mustard oil (optional)
3 tbsp yogurt
1 chopped green chili
Salt to taste
1/2 tsp Garam Masala
2 tsp Kashmiri Mirch (for color)
Cilantro
Mint leaves

Method:
Thaw the fish and marinate in Vinegar and salt for 10 mins, this removes the fishy smell...


In a bowl add the ingredients... I started with Ginger/Garlic, green chili...


Kashmiri Mirch, Mustard oil...


Add the yogurt, cilantro and mint leaves and Mix well... Marinate for 1/2 an hour...


In a Grilling Pan, Spray some oil and place the Marinated fish...


Cook about 5-7 mins each side (or until fully cooked & golden brown)


Squeeze Half a lemon and enjoy it with a drink...;)

Mix it up!! (Salad)

Ingredients:

2 strands of Romaine Lettuce
2 strands of Red top lettuce
Blanched Broccoli
Handful of tomatoes
1 carrot
Olives
Avocado
2 Celery sticks
2 Spring onion strands
1/2 cup Pomegranate 
Bread crumbs
Oregano to taste
Black Pepper to taste 

Method:

Wash all the veggies thoroughly and start chopping them...


Any shape and size you want...;)


Added the avocado, pom seeds, and I also added walnuts...


There you go, add oregano, salt (i didn't add any), and black pepper... Top it up with bread crumbs...

Sabudana aloo Tikki

I'm back with my delicious recipes and I promise I'll try to be regular...;)

Navratri Special Recipe

INGREDIENTS:
1 Cup Sabudana (Tapioca)
4 Medium size potatoes
Salt to taste
1 tbsp Aamchur (Mango powder)
1 Green chili chopped
1/4 cup roasted peanuts (grounded)
Cilantro
Oil to fry

METHOD:

Soak sabudana (tapioca) for 4-5 hours or more if required.
Boil the potatoes and mash them.


Add the crushed roasted peanuts...


Add the sabudana (Tapioca)...

Add cilantro, salt and Mango powder (Aamchur) and green chilies...


Mix it all together and start shaping them...


Tikki shape/round shape and flatten them a little with my palms....


I shallow fried them (although this is too much oil for me) but somehow I convinced myself... 


Cook them on medium low flame... (unlike me) but this way I get to make them crispier...:D


Take them out on a tissue paper to soak the extra oil... and they are good to be served with Green cilantro mint chutney..:D
If I haven't posted a recipe for that will do it soon..:D 


By the end of it, oil was wiped out... :P


 My end product... Made around 15-16 tikkis...


Amazing if served with Green Mint cilantro Chutney...
