Dhabha style chicken

ALL YOU NEED

1 whole chicken 
1 medium onion sliced
4-5 tomatoes chopped
2 tbsp garlic paste and ginger paste each
3-4 green chillies chopped/sliced
2 tbsp desi ghee
1 tsp cumin seeds
salt to taste
1 tbsp garam masala
cilantro for garnish

METHOD:

Heat ghee in a pan/kadhai and add cumin seed with onions.. cook till translucent



add garlic, ginger and green chillies...


Add the tomatoes...


You can add garam masala now, close the lid, open after 3-4 mins and mix everything...


Add the whole chicken and let this cook and cook and cook... 
The trick to get a dhabha style chicken is to cook the masala... I literally cooked it for 20-30 mins or until the oil separated...  


Make sure the chicken cooks well...


I personally didn't want any curry, so I cooked it until it was just the masala...


When done, garnish with Cilantro and it's ready to be served...

Aloo Methi

Methi season is here so here we go with the easiest recipe of the season....very few ingredient recipe, quick to make, delicious to eat...

ALL YOU NEED

2 pinches of asafoetida (heeng)
2 small potatoes
Methi leaves (washed thoroughly)
Ginger grated for garnish
2-3 green chillies chopped
Salt to taste
1/2 tsp haldi (turmeric powder)
3 tbsp oil

METHOD:

Heat oil in a pan, add cumin seeds and asafetida and shallow fry the potatoes. Add Methi leaves when potatoes are almost done and let it cook for 5-7 mins or until leaves are cooked...Add half of the grated ginger, salt and turmeric powder.



Garnish with grated ginger and chillies..

Apple Pie

This was my first time making a pie, turned out pretty well...


ALL YOU NEED:
Butter
1/2 cup brown sugar
1/2 cup sugar
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
6-8 granny smith apples

2x Pillsbury pie crust (frozen)

METHOD:

For Filling:

Melt butter in a pan



Add brown sugar, regular sugar, cinnamon and nutmeg..



Add about 2 tbsp of water, bring it to boil and turn off the heat. 


Peal and slice all the apples..


Preheat over to 425, place the pie crust on the pie pan...


Place the apples 


Pour in the caramel...


Cover the pie with another pie sheet...


Make sure to pierce 4 holes in the center for air...


I used some cookie cutters and pasted these fun shapes, this is absolutely optional.. 
Bake it on 425 for 15 mins, lower the temperature to 325, bake it for 35-40 mins or until the apples are cooked.


Make sure to seal the sides really well, else it'll end up like mine... 



Ready to be served with Vanilla ice cream...:D

Pesto Pasta Salad

ALL YOU NEED:

2 cups boiled pasta
1 cup cooked chickpeas
Basil Pesto
Salt and pepper to taste

Vegetables for your salad:
Bell peppers
Carrots
Cherry tomatoes
Salad Mix

I also cooked some chicken in pesto sauce and added to this (optional)

METHOD:

Put everything in a salad bowl 





Add pesto according to your taste, and it's ready to be served...

Garlic Lime Noodles

Very simple recipe, It's definitely not the Indian Tadka you are looking for but something different which absolutely takes no time.

ALL YOU NEED:

1/2 box of Berville Spaghetti (good enough for two people)
Any kind of veggies you want in it
Lime juice of 2-3 limes (depending on how sour you want)
4-5 finely chopped garlic
1 tsp soy sauce
2 tbsp vinegar
Salt and black pepper to taste
1 tbsp dried oregano
oil
1tbsp chili flakes (or acc. to taste)
hakka noodle masala (optional)`
1 chicken breast in cubes seasoned with salt and pepper (optional)

METHOD: 

Start with Bring a pot of water to boil with salt in it and cook the spaghetti as directed, then cook the chicken and keep it aside until needed. 
Saute garlic in 1 tbsp oil and then add the veggies. Make sure you don't cook them all the way.


Add the chicken with seasonings, salt, pepper, oregano, hakka noodle masala (optional), chili flakes. Also add soy sauce and vinegar.


Now add the boiled noodles and lime juice.


 Mix it and it's ready to be served.

Green chicken kababs

I've been making theses for a while now and I think these kababs have become my new love just because they r super easy make.
There can be various versions of it, this is my version I'm sharing hope you'll will enjoy it.

ALL YOU NEED:

2 Chicken Breasts (washed and cut into pieces)
1/2 cup mint leaves
1 cup spinach leaves
1 cup cilantro
3-4 green chillies (depending on how hot they are and how hot you want it to be)
Ginger
5-6 cloves Garlic
2 tbsp Plain Yogurt
Salt to taste
1 tbsp Garam Masala
2 tbsp olive oil

Lemon for Garnish

METHOD:

This is going to be really easy trust me...
Take all the ingredients except Chicken and blend them...



Wash the chicken thoroughly and add this marinade to it. I would recommend refrigerating it for atleast an hour, if you can do more that'll be good too... 


When ready to eat, heat a grill pan with generous amount of olive oil (or any oil you cook with) and grill the marinated chicken...


Let the chicken cook plus get some grill marks...


Squeeze a lemon on top and its ready to be served!!

Oregano Chicken

This recipe is very special because one my oldest friend shared it with me. So, I gave it a try and ended well, very delicious and super easy.

ALL YOU NEED:

2 chicken breasts
2 inch butter for cooking
Oregano (be generous)
1 tbsp garam masala
Salt to taste
Lemon to garnish

Spices needed:
3 green cardamoms
1 black cardamoms
1 inch cinnamon stick
1 star anise
1 tsp cumin seeds

METHOD:

In a pan heat butter and add all the spices, cook for a minute and add chicken...


Add garam masala, salt and oregano...


Add about 1/2 cup water and let it cook until the water dries...



There you go it's ready. Squeeze a lemon before serving..




This makes an amazing appetizer, you can use chicken wings instead of boneless. I tried it, loved it, now it's your turn!!

Shrimp Curry

ALL YOU NEED
Shrimps 
coconut milk canned (13 oz)
1 medium onion chopped
1 medium tomato chopped
2-3 green chilies
1 inch Ginger grated
3-4 Garlic cloves grated
1 tsp (teaspoon) mustard seeds
5-6 curry leaves
1-2 dried red chili
Salt to taste
1 tbsp garam masala
1 tablespoon (tbsp) red chili powder (optional)
1 tsp turmeric powder
cilantro to garnish

METHOD:
Heat oil in a pan and add mustard seeds, curry leaves, dried chili. cook for a min and add the onions. Add salt, garam masala, red chili powder and turmeric.


Thrown in the green chilies and ginger garlic..


Add the tomatoes, cover and cook for 5-7 mins, open the lid mix it all together...


Add the coconut milk and little bit of water


Wash the shrimps and add them to the curry..


cook for another 5 mins with lid and about a min or two without the lid. Also adjust the water according to the curry you need.


Garnish with cilantro and ready to be served with boiled rice..
