Blue Cheese Salmon Salad

Happy New Year you'll!! So like every year we start with a resolution of loosing some pounds likewise this year... let's see how long we can follow it, have to loose some holiday weight...My inlaws family visited us for the holidays... it was so much fun and scrumptious food..:D 

Decided to make something light but delicious.. hope you'll will like it. It's a super easy recipe and ready in minutes..:D


ALL YOU NEED:

Salmon (I eyeballed it good enough for 2-4 ppl)
Black pepper
Salt to taste
1 tsp Garlic & Ginger paste each
Dried Oregano
Blue Cheese Dressing (I used low calorie greek yogurt based dressing, you can use the real one if you like)

Vegetables as many as you want and whatever kind you want
I used small portions of:
Onions
Bell pepper (Red, yellow & green)
Tomatoes
Cucumber
Green chili
Green onion/ spring onion
Cabbage
Celery
Cilantro
Parsley
Mint leaves

METHOD:

Start with Heating a grill Pan with few drops of olive oil and placing Salmon with Ginger garlic paste, black pepper, salt, dried oregano...
while it's cooking start breaking it into pieces...


Side by side chop all of the veggies and place them in a salad bowl/ container


Once the salmon is cooked and the veggies are chopped mix everything together add a bit more salt to the vegetables...


Add the Blue cheese dressing.. I added 2 tbsp because we are not much into dressings but you can use it to your desire...:D


This is the dressing I used...delicious without guilt ;)

 Mix it all well and wallah it's ready...:D


 I served it with the side of Rosemary potato fries and some sweet potato fries (Baked)




Make sure you guys try it..makes a yummy left over sandwich..:D

Blueberry Muffins

INGREDIENTS:

Dry Ingredients:
2 cups All purpose flour
1 tsp baking powder
1 cup of Sugar
Pinch of salt

Wet Ingredients:
1 stick of butter
 2 eggs
1 tsp vanilla extract
2 tsp milk 

Fresh Blueberries
Cinnamon powder
1 tsp sugar

METHOD:

Pre heat the oven to 450 degrees 

Combine all the dry ingredients in a bowl...
and all the wet ingredients in another.. whisking 1 egg at a time...

Combine them together...


Add the blueberries and mix it...


I was out of muffin liners but was craving for these so I used wax paper cut them in quarters and placed them in the muffin dish...;)
Put the batter in using an ice cream scoop or a spoon...


Top each muffin with cinnamon powder and sugar (just a pinch of each)


Bake it at 450 degrees for 15 mins...
and walaahhh...!!






This recipe makes 12 muffins :D

Grilled Tandoori Fish

I named it Tandoori fish because of its ingredients...;) 

Ingredients:
4 Tilapia filets (You can use whatever kind of fish you want)
1 tbsp each Ginger/Garlic Paste 
2 tbsp Mustard oil (optional)
3 tbsp yogurt
1 chopped green chili
Salt to taste
1/2 tsp Garam Masala
2 tsp Kashmiri Mirch (for color)
Cilantro
Mint leaves

Method:
Thaw the fish and marinate in Vinegar and salt for 10 mins, this removes the fishy smell...


In a bowl add the ingredients... I started with Ginger/Garlic, green chili...


Kashmiri Mirch, Mustard oil...


Add the yogurt, cilantro and mint leaves and Mix well... Marinate for 1/2 an hour...


In a Grilling Pan, Spray some oil and place the Marinated fish...


Cook about 5-7 mins each side (or until fully cooked & golden brown)


Squeeze Half a lemon and enjoy it with a drink...;)

Mix it up!! (Salad)

Ingredients:

2 strands of Romaine Lettuce
2 strands of Red top lettuce
Blanched Broccoli
Handful of tomatoes
1 carrot
Olives
Avocado
2 Celery sticks
2 Spring onion strands
1/2 cup Pomegranate 
Bread crumbs
Oregano to taste
Black Pepper to taste 

Method:

Wash all the veggies thoroughly and start chopping them...


Any shape and size you want...;)


Added the avocado, pom seeds, and I also added walnuts...


There you go, add oregano, salt (i didn't add any), and black pepper... Top it up with bread crumbs...

Sabudana aloo Tikki

I'm back with my delicious recipes and I promise I'll try to be regular...;)

Navratri Special Recipe

INGREDIENTS:
1 Cup Sabudana (Tapioca)
4 Medium size potatoes
Salt to taste
1 tbsp Aamchur (Mango powder)
1 Green chili chopped
1/4 cup roasted peanuts (grounded)
Cilantro
Oil to fry

METHOD:

Soak sabudana (tapioca) for 4-5 hours or more if required.
Boil the potatoes and mash them.


Add the crushed roasted peanuts...


Add the sabudana (Tapioca)...

Add cilantro, salt and Mango powder (Aamchur) and green chilies...


Mix it all together and start shaping them...


Tikki shape/round shape and flatten them a little with my palms....


I shallow fried them (although this is too much oil for me) but somehow I convinced myself... 


Cook them on medium low flame... (unlike me) but this way I get to make them crispier...:D


Take them out on a tissue paper to soak the extra oil... and they are good to be served with Green cilantro mint chutney..:D
If I haven't posted a recipe for that will do it soon..:D 


By the end of it, oil was wiped out... :P


 My end product... Made around 15-16 tikkis...


Amazing if served with Green Mint cilantro Chutney...

Methi Chicken



ALL YOU NEED:

2 cups Methi leaves
1 cup Spinach leaves (optional)
1 onion (medium)
2 tomatoes (medium)
1 tbsp garlic and ginger paste (each)
2 chicken breast washed and cut 
2 chicken drumsticks ( I love with bone pieces you can substitute it with boneless chicken)
1 chopped green chili
1 tbsp oil
1 tsp cumin seeds
Salt to taste
1 tsp Garam masala

METHOD:

Wash Methi and spinach (optinal) leaves thoroughly....




Heat oil in a skillet and add cumin seeds...soon add onions and cook them till brown/translucent...


Add green chillies and tomatoes and cover it with a lid let the tomatoes cook well...


Add ginger and garlic paste....


and finally add chicken and cover it again for 2 mins...

P.S. I cook with bone chicken in a pressure cooker and then add it to the masala...


After few mins add the methi and spinach leaves and cover it for a while...


Do remember to add salt and garam masala and a little red chili powder (optional)


Cover it with a lid and keep stirring it frequently...
I did add the drumstick at this time...


Once the chicken is cooked and the leaves are kind of soggy enough to eat your chicken's ready... I did keep some curry in it to eat with rice..:D

Watermelon Salsa

This one is really simple and an amazing snack/ breakfast
Serves 2


All you need:

1/2 watermelon (small)
1 small onion chopped (make sure onion is very small)
few cherry tomatoes
1/2 tomato chopped
handful of chopped cilantro
2 tbsp mint leaves chopped
sea salt to taste
chunky chaat masala/ black salt (for taste)
1-2 green chillies (optional)
1 mango chopped (optional)

METHOD:

Add all the ingredients one by one in a bowl... Yes right, it's that simple...;)

Then add salt very little amount and chaat masala/ black salt (for taste)

Mix it real good and it's ready to be served..:)

Best when served cold...
