Fish Biryani with brown rice

I substituted regular Basmati rice with brown, please feel free to choose whichever one you want.

ALL YOU NEED:
Salmon 2 medium size fillets
2.5 cups brown rice
1 sliced onion
1 chopped tomato
1 bay leaf
2 dry red chili
Cumin seeds
Black amd green cardamom
Ginger garlic paste 2 tbsp each
2 tbsp yogurt
Salt to taste
2tbsp fish biryani masla(optional) or 2 tbsp garam masala
2 tbsp Oil

Marination for fish:
Ginger garlic paste
Salt to taste
1 tbsp mustard oil
2 tbsp yogurt
Chilli powder
Garam masala powder

METHOD:

Cook brown rice acc. To instructions, i used my slow cooker.

Heat oil and add khade masale in the pan



Add onions...

Tomatoes, ginger garlic


Mix well and add yogurt, also add salt, fish biryani masala/garam masala

Place the marinated fish on top of the masala and spread brown rice over it


Cover with a lid and cook for 10-15 mims or until fish is cooked...


Add boiled eggs to garnish with cilantro...

 Mix when ready to be served...

Meethi Sevaiyan (Sweet Vermicelli)

This is my version of vermicelli, I love it when it's cold and lots of milk...I have seen many people who like it to be dry (not too much milk) if u r one of them, then please use milk as needed.

ALL YOU NEED:

1 cup vermicelli
1 tbsp ghee
2 green cardamom
1/2 cup sugar
3 cups milk
Dry fruits (almonds and raisins) for garnish


METHOD:

Heat ghee in a pan and roast vermicelli...


Once it starts to get brown add cardamom and keep stirring for another min...


Add milk and bring it to boil


Add sugar and garnish with dry fruits...


 Simple and delicious...


Chill in refrigerator before serving or eat it warm :D

Instant Pot- Masala chicken

I'm so excited to introduce instant pot recipes to my blog, this is definitely made my life easier. If you don't own one yet please get it!! 
This is a 5 min chicken masala recipe which will be my goto from now. 

ALL YOU NEED:

2 Chicken breast cut in pieces
1 medium onion pureed
2 tomatoes pureed
2 green chillies
1 tbsp each ginger garlic paste
2 tbsp oil
1 tbsp cumin seeds
salt to taste
1 tbsp Garam masala/ chicken curry masala


METHOD:
Turn The IP on saute mode.
Heat oil, add cumin seeds and onions, cook till reduce in size and then add tomatoes. Keep stirring the masala until the oil separates...
Add ginger garlic paste, salt, garam masala/ chicken curry masala, green chilies.

Add chicken, close the lid, set it to Manual 6 mins and vent normal



Ready to be served with rotis..:D Yes!! it's that simple...:D

Apple cinnamon Muffins

Super easy and delicious muffin recipe :)


ALL YOU NEED:

2 cups All purpose flour
1 cup sugar
1 tbsp Baking powder
1 tbsp vanilla essence
1 large egg
1/4 cup vegetable oil/canola oil
1/2 cup milk (ur choice skim,2%,whole)
1 tbsp cinnamon powder
1 apple pealed and grated
2 tbsp sugar

METHOD:

Preheat oven to 400 F
 
Take a bowl with grated apple, 2 tbsp sugar and cinnamon, keep it aside.

In another big bowl add all the dry ingredients (1st 3 in the list above). Mix them well and take about 1/2 cup of the mixed ingredients and add to the bowl with apple (set it aside until needed again)

In a third bowl whisk the egg with a hand mixer until nice and fluffy, add vanilla essence and oil to it, mix again. :)

Add the egg mixture to the dry ingredients, mix them and then add apple mixture and milk. Using a baking spatula mix all the ingredients together nicely. 

Scoop the mixture to the muffin tin with a liner and bake for 20 mins. This recipe makes medium sized 12 muffins :D



You won't regret! These are absolutely amazing..:D



Sprinkle some powder sugar if u want :D

Idli

This is a time taking process but a very healthy choice for breakfast. You can use this batter to make uttapam and dosas as well. 

ALL YOU NEED:

1 cup urad dal
3 cups idli rice
1 tsp salt


METHOD:

Wash and soak dal and rice in water over night or for 8 hrs atleast.
Puree both together with the water it was soaked in, add salt in and leave it to ferment overnight or atleast 6-8 hrs.




The batter will double its quantity when fermented...


Oil the idli container and pour the batter. Steam for atleast 12 minutes or until it's cooked.


Enjoy with Chutney, sambar or even ketchup... :)



You can make the idlis and freeze them. Microwave them after sprinkling some water.

Babru

This is my childhood favorite till date..!! A lot of people call it gulgule as well..!!

THINGS YOU NEED:
1 1/2 cup wheat flour
1 cup sugar (can be adjusted if you want it a bit more on the sweeter side)
1 tbsp fennel seeds

Oil to fry

METHOD:
Mix the three ingredients with water, peanut butter consistency...


Now heat oil for frying in a kadhai/pan and either with your hands or a big spoon scoop out the batter and fry it in the oil, add one by one forming a random shape.


There you go, fry on a medium heat to cook it from the inside for few minutes and high heat to get it brown from the outside...
I take them out on a paper towel, not to soak the oil but my guilt of eating fry food.


Ready to be served!! :)


Aloo Kachari (potatoes indian style)

One of the ways I cook potatoes in rush. Hope you'll like it.


ALL YOU NEED:

5-6 potatoes cut them potato veggies style
1 tbsp carom seeds
1 tbsp cumin seeds
2 tbsp mustard oil (or any oil you want to use)
salt to taste
1 tsp Black pepper
1 tsp turmeric powder
Chaat masala for garnish
Cilantro for garnish
1 Lemon juice

METHOD:

Heat oil in a pan with carom and cumin seeds.


I pre boiled the potatoes (50%) for them to cook faster. Add them to the pan.


Also, the seasonings, salt, turmeric powder, black pepper...


Cook them until brown or fully cooked, stirring occasionally.


Garnish with Cilantro, chaat masala and lemon.
