Mint chutney with Pomegranate

Mint chutney is a sider with your food...:D Being Indian I've learned not to eat my food without sliced Onions with lemon and Chutney is another thing to go with your food...:D As my dad says "Where are my Food accessories?" lol
So here it goes...:D

All You Need:

1 cup Mint leaves
2 cups Coriander Leaves
1 onion
7 green Chilies (you can use less depending on how hot you want)
4 tsp Mango powder (Aamchur)
1 cup Pomegranate seeds
1 tsp Red chili powder
2 tsp lemon juice
Salt to taste

METHOD:

Grind all these ingredients in a grinder with little bit of water (4-5 tsp) and your Chutney is ready...


Make changes according to your taste (how spicy & sour you you want it to be)

It should be little tangy little spicy and amazing to eat with any kind of Indian recipe..:D

Began Ka Bharta...

All You Need:

1 Eggplant
1 1/2 sliced Onion
2 chopped tomatoes
1 tbsp each Ginger Garlic paste
Salt to taste
1 tsp cumin seeds
1/2 tsp Red chili powder
2 Green chilies
1 tsp Garam masala
Cilantro for garnish

METHOD:

Roast the eggplant on gas or broil it in the oven.



 With a knife and gentle press of hands roughly cut the roasted eggplant......


Heat  3 tsp oil in a pan add cumin seeds and onions until brown..


Add tomatoes..


Mash them and mix them...


Add the mashed eggplant...


Add salt, green chilies, garam masala, red chili powder, ginger and garlic, mix it all together....


Cook covered 5-7 mins and few minutes uncovered or until cooked, stirring occasionally.


Garnish with cilantro and green chilies...

Malai Kabab


All You Need:

2 chicken breasts cut into 5 inch pieces
1 tsp paste Ginger
1 tsp Paste Garlic
Coriander leaves
2 large Green chilies
2 tsp Dry Mint
2 tsp Cream
Olive oil

METHOD:


Grind Ginger, Garlic, Coriander leaves, Green Chili, Mint leaves (I used dry mint) to make a paste...


Take the chicken in a bowl, add the paste...


Add Cream...


Season it with salt and mix it well and let it marinate for 2 hrs at least..


If you have skewer then arrange the chicken on it (I used chop sticks lol :P)


Place it on a baking sheet...(make sure to spread the Marinade on the baking sheet before placing the sticks)


Spread olive oil all over the chicken before placing it in the oven...


Bake it at 350 degrees for 20-25 min...


Remember to turn it after 10 min and then put it back in...Squeeze a lemon on top and njoiii...:D

Pao Bhaji

One of the most popular street food in India...It delicious and filling So, I've sorted it as a breakfast item ;)



ALL YOU NEED:

6 Boiled Potatoes
1 1/2 large Onion
2 carrots
1 chopped green bell pepper
3 Tomatoes
1/2 cup tomato puree
Any other veggies you want the more the better ( Cauliflower, beans, pees etc)
4 cups water
5 tsp Pao Bhaji Masala (available at Indian Store)
Freshly chopped coriander leaves
2 Green chilies
Salt to taste
1 1/2 tsp Red chili powder
2 tsp Butter/ ghee

METHOD:

In a pan add Butter/ghee (whatever you prefer), sauté onions, cook until brown and then add carrots in the pan and add tomatoes to a side... (you can add more veggies in this step)


When tomatoes are soggy, mash them, also add tomato puree and mix them well... 


Side by side peel the boiled potatoes and mash them...


Add them to the veggies mixture...


Now add Salt red chili powder, turmeric powder and pao bhaji masala...


 I also added coriander leaves and green chilies in this step but you can wait till the end...


 Add water (3-4 cups) I also added 1 chopped green bell pepper so that it remains crunchy..:D


Mash the potatoes really well and let it boil...


The more it boils the better it'll taste..;)


Add butter on the top to garnish and get a really nice flavor...


You can keep boiling it to the consistency that you want (it's generally watery)

Now heat another pan and cut the bun from the center...


Add butter...


Put this bun on the heated pan...


Add little bit more butter..


Reverse and heat...:D 





Okra (Indian Style)



All You Need:

Okra chopped in desired shape
1 Sliced onion
1 1/2 chopped tomato
1/2 tsp Garam Masala (optional)
1/2 tsp red chili powder
2 green chillies sliced or chopped
Salt to taste
1 tsp cumin seed

METHOD:

In a pan add 2 tsp oil and cumin seeds and cook onions until brown...:)



Add tomatoes, cover it with a lid, cook until the tomatoes are soggy and then mix everything together...
Add green chillies.
Now i take this masala out in a bowl and add a bit of oil again and cook okra for 5-7 minutes, stirring frequently.
Add the masala afterwards and mix it together...


Also add salt, garam masala & red chili powder and keep cooking until okra is fully cooked, do not close it with a lid, it'll make it lacy.



Enjoy it with Chapati...:D


NOTE: If you're using fresh Okra, wash it and pat it dry really good before cutting it....

Egg Curry


All You Need:

6 boiled eggs
1 Bay leaf
Cumin seeds
2-3 black and green Cardamon
1 Onion
1/2 cup Tomato puree or 2-3 tomatoes pureed
1/2 tsp Red chili powder
1 tbsp each Ginger garlic paste
Salt to paste
Olive oil

METHOD:

In a pan add 4 tsp oil and fry the eggs...


 Keep them aside..

In the same pan heat 2 tsp oil in a pan, add cumin seeds, cardamons, bay leaf...


let them cook for a little while, grind the onion and add the paste...



Cook until brown and add tomato puree or pureed tomatoes and cook until oil separates..


Add salt, red chili powder, ginger and garlic paste..
Add 2 1/2 or 3 cup water... 


Add the eggs to the curry, Close the lid for 5-7 min and let the curry boil...


Remove the lid cook it for few more minutes or until curry thickens to your desire...
