Tomato chutney

ALL YOU NEED:

7-8 tomatoes chopped
1 green chili
Salt to taste
1 inch ginger grated
2 tbsp sugar
Cilantro chopped
Mint leaves chopped
1 tsp mustard seeds
1 dry green chili
2-3 curry leaves
1 piece of coal
Mustard oil

METHOD:

Heat oil in a pan, add mustard seed, dry chili and curry leaves, when they splutter add chopped tomatoes with salt, sugar, green chili and ginger. Cover it with a lid and let it cook until tomatoes are soggy...



Add cilantro and mind leaves to garnish...

Add about half cup of water and let it come to a boil...

Right before you are ready to serve the food temper the chutney with mustard oil and coal



 Deliciousness is ready to be served...

Raw banana in coconut curry

ALL YOU NEED:

4 small raw banana
2 cups coconut milk
1 cup water
2 tbsp cumin seeds
2 tbsp coriander seeds
7-10 cashews
1 dry red chili
2 tomatoes pureed
1 tsp mustard seeds
3-4 curry leaves
Salt to taste
1 tsp red chili powder

METHOD:

Start by steaming the raw bananas...
While thats happening, dry roast cumin seeds, coriander seeds, cashews and dry red chili (you can use more or less acc. To ur spice level taste)
When roasted grind it to form a paste (keep it aside)

When bananas are steamed, peel off the cover and cut them in desired shape




Make masala by heating oil in a pan, add mustard seeds and curry leaves..let is splutter, then add tomato puree...
Cook until the oil seperates...

Add the roasted cashew, cumin, dry chili and coriander paste with coconut milk...


Add the chopped and steamed bananas to the curry with water, salt and red chili powder cook for 5 mins with lid..


Cook it without the lid for 3 mins... Garnish with cilantro leaves





Ready to be served.. 
P.S. if you don't want to use tomatoes you can substitute it with tamarind water. :)

Makhane ki kheer

ALL YOU NEED:

2 cups makhane/lotus seeds
6 to 8 cups milk
1 cup Sugar/or any other sweetener you want to use
3 green cardamoms
Mixed nuts like almonds, raisins
1 tbsp ghee

METHOD:

Heat ghee in a deep pan and roast makhane on low flame.
Take them out when roasted and grind them don't make a powder keep them unevenly grounded.

 In the same pan bring milk to boil with cardamoms.

Add the grounded Makhane and sugar and stir it...


Add the nuts... I only used pumpkin seeds but you can use any... let it boil with occasional stirring for 7-10mins and its ready to be served hot or cold...:)


Keep it in the fridge to eat it cold... its delicious..:)

Sabudana khichdi

ALL YOU NEED:
2 cups sabudana(Tapioca) soaked over night
1 tbsp Ginger grated
1 medium potato chopped in cubes
Paneer chopped in cube
Half cup peanuts
Cooking oil
1 tsp mustard seeds
1tsp red chili powder
1 tsp turmeric powder(optional)
2 -3 curry leaves
Salt to taste (rock salt)
Green chili chopped
Juice from 1 lemon
Cilantro chopped for garnish

METHOD:

Dry roast peanuts and keep them aside. Heat oil in a pan and add mustard seed and curry leaves and cook potatoes until golden brown...

Wash and drain the dipped tapioca...


Also cook the paneer until brown...


Add the sabudana/tapioca to the potato. Paneer and peanut mixture. Add salt, red chili powder, grated ginger,lemon juice. Mix it well...



Add cilantro to garnish and enjoy...:)

Arbi fries

Here's a delicious recipe that you can prepare while fasting or Navratri time...
Its really easy and requires only few ingredients...

ALL YOU NEED:

7-8 medium Arbi cut in french fries shape
1 tbsp carom seeds
Salt to taste
1 tsp haldi/turmeric powder
1tsp red chili powder
Few cilantro leaves chopped to garnish
Juice from half lemon

METHOD:

Heat 3 tbsp oil in a pan and add the arbi... fry them until golden brown or fully cooked...


Add salt, turmeric powder, carom seeds and saute it for another 2-3 mins... 

Garnish with cilantro leaves and lemon juice... :)
