Besan Ke Ladoo

Raksha Bandhan Special
My brother loves Besan ke ladoo I wish I could make him these every other day..:)

The recipe I referred for the quantity had a little too much ghee for me but here i'll be writing the right amount to use (although I used more) So it depends on you if you want more/less ghee in ur ladoos..:D


ALL YOU NEED:

2 Cups Besan/ gram flour/ chickpea flour
1/2 cup Ghee/ unsalted butter
1 cup Sugar
Chopped Almonds or any other nuts u want
1 tsp nutmeg powder or green cardamom powder

METHOD:

Add ghee in the pan

Soon add besan to it don't wait for the ghee to boil..


Now all you need to do is roast the besan/ gram flour...


This process will take minimum of 20 min... There will be a sweet smell in the whole house when Besan will start roasting so just notice that...:D


 Stir in the nutmeg powder/ cardamom powder...


Chop some almonds and stir them in..:D You can also see the color change it has turned a little brownish...

After it's roasted take it out on a Plate and let it cool down for 15-20 min...


Then add Powder sugar...


 It'll be difficult to mix it in the plate so I shifted it in a bowl and mixed it really nice...:D
Just be careful it'll still be hot...:D


Now take a small portion of the mixture and form it into a round shape...


Mine are not perfect but it'll work..:P
Ready to be served...:D


This recipe made 14-15 Ladoos :D

Green Thai curry with chicken


All You Need:

2 chicken breast cut into small pieces
2 tsp Green thai curry paste
1 1/2 cup Coconut milk/ fresh coconut grinded into a paste with milk and water
Salt to taste
Different veggies you want I used
JalapeƱos, green bell pepper, onions, spring onions, carrots etc..
1 chopped green chili
1 cup chicken broth/ water
4 tsp Oil

METHOD:

Heat 2 tsp oil and stir in chicken until cooked and then keep them side on a plate...


Cut all your veggies...:D


In the same pan heat 2 tsp oil and stir in all the veggies cook for few mins...


Sprinkle some salt and red chili powder (optional)


Stir in the chicken...


Add the thai curry paste...

 Mix well...:D


You can simply use coconut milk which is available at any store near you but i personally used fresh coconut & grinded it with milk and water to form a waterly paste...
Add it to the chicken and cover it for 2-3 mins...


Add chicken broth/ water and let it come to a boil....


It's ready to be served with boiled rice..:D

Bharwan Aloo

I made these with the bitter gourd recipe so it wasn't much of a hard work...;)

ALL YOU NEED:

1 1/2 potatoes (Large)
Salt to taste
2 tsp Red chili powder
2-3 tsp Garam Masala
1 tsp Coriander powder
1 tsp Cumin seeds
olive oil/ mustard oil/ veg oil

METHOD:

Get all the Masala ready in a small bowl before you heat the oil in a pan...
Now heat oil and stir in the Masala..


Cook for 1-2 mins and take it off the gas...


Peel the potatoes and wash them then Cut them into small pieces (I did 4 halves of 1 potato I know you can see jst 3 in the pic...:P)


Now slit each half from the center carefully don't take it all the way to the end jst the center....


With a finger u can check (careful while doing it)


Now on a non stick add 2-3 tsp oil and place the potatoes and fry them from both sides don't wait for them to be cooked jst the golden brown will do..:D


Something like this....


Take the potatoes out on a plate and let them cool down a little so that u can hold them...
Once done, using a knife try to put as much as masala u can inside the potatoes....


It's easy once you start doing it..:D


Preheat oven to 350 degrees
Place the filled in potatoes on a baking sheet and put them in for 20 -25 mins


Take them out after it's done and cut it from the center to see if they are cooked...:D
If yes they are ready to be served...:D


Served it with Rice and lentils...:D

Bharwan karele

ALL YOU NEED:

4 karele (bitter gourd) small size (I had large ones)
1/2 onion finely chopped
Salt to taste
2 tsp Red chili powder
2-3 tsp Garam Masala
1 tsp Coriander powder
1 tsp Cumin seeds
olive oil/ mustard oil/ veg oil

METHOD:

Rinse off the bitter gourd thoroughly and peel off the skin a little (you can keep the skin if you want to use in the masala)


Slit them from the center...


Remove the seeds from the inside and keep them aside as we'll need them in the masala...


In a non stick pan heat 2-3 tsp oil and fry them until golden brown from all the sides...:D


Take another pan by the time kerala/ bitter gourd is getting fried...
Heat 2 tsp oil (i used mustard oil but u can use any) and add cumin seeds with onions and cook until golden brown...


Add the rest of the Masala which is red chili powder, coriander powder, garam masala and salt...


Now add the seeds we kept aside before....


Stir and cook for about 2-3 mins and Masala is ready..:D


Take out the bitter gourd on a plate if it's brown (even if it's not cooked don't worry)
Now fill this masala inside them and place them on a baking sheet...:)
Preheat oven for 350 degrees and keep them inside for 20-30 mins or until cooked


What I did was baked them for 25 min and placed them on the non stick pan again and covered it on a low heat for 15-20 min or until I could see a little bit of oil from the bitter gourd...:D 


They are ready to be served now...:D



I served it with Rice and lentils but you can have them with Butter rotis as well...:D
