Bharwan karele

ALL YOU NEED:

4 karele (bitter gourd) small size (I had large ones)
1/2 onion finely chopped
Salt to taste
2 tsp Red chili powder
2-3 tsp Garam Masala
1 tsp Coriander powder
1 tsp Cumin seeds
olive oil/ mustard oil/ veg oil

METHOD:

Rinse off the bitter gourd thoroughly and peel off the skin a little (you can keep the skin if you want to use in the masala)


Slit them from the center...


Remove the seeds from the inside and keep them aside as we'll need them in the masala...


In a non stick pan heat 2-3 tsp oil and fry them until golden brown from all the sides...:D


Take another pan by the time kerala/ bitter gourd is getting fried...
Heat 2 tsp oil (i used mustard oil but u can use any) and add cumin seeds with onions and cook until golden brown...


Add the rest of the Masala which is red chili powder, coriander powder, garam masala and salt...


Now add the seeds we kept aside before....


Stir and cook for about 2-3 mins and Masala is ready..:D


Take out the bitter gourd on a plate if it's brown (even if it's not cooked don't worry)
Now fill this masala inside them and place them on a baking sheet...:)
Preheat oven for 350 degrees and keep them inside for 20-30 mins or until cooked


What I did was baked them for 25 min and placed them on the non stick pan again and covered it on a low heat for 15-20 min or until I could see a little bit of oil from the bitter gourd...:D 


They are ready to be served now...:D



I served it with Rice and lentils but you can have them with Butter rotis as well...:D
