Mutton Biryani

My Mom makes world's best biryani (actually she makes everything amazing...:P) so, I tried what I learnt from her...

Ingredients:

1.75 lbs Mutton
Half raw papaya
2 tsp Desi ghee/ 4 tsp Olive oil
10 tsp Milk
Food color (I used Orange, green)

Spices:

7 Black and green cardamom
4 cloves
2 bay leaf
4 Cinnamon sticks
2 Mace spice (Javitri- you can find it in any Indian store)


METHOD:

Grate the Papaya in a bowl...
Add the mutton pieces to it and Marinade for 2 1/2 to 3 hrs... Papaya works as a tenderizer so the mutton is much more easier to cook if marinaded before hand...:)

In a pan add ghee/oil and add all the spices...



Add the onions and cook until brown..:)



Now add the tomatoes to it.. and cook well...



Add chilies and mash & mix the tomatoes...

Add mutton to it now with papaya and cook it until it's soft and tender...


Cover it with a lid and cook until the meat is really tender, soft and ready to eat..



Now in another pot add ghee and few more spices (cumin seed, black cardamom, cinnamon stick) 

Let all of these spices cook and add rice to it...(rice shouldn't be fully cooked so just add less water, rice should be about 80% cooked)

Cover it with the lid and let it cook.... add the rice above the lamb mixture (when lamb is properly done)


I had these food colors so I added them to the Biryani (available at Walmart too) just simply add few 4 tsp milk in each bowl and add a pinch of each color to them...


Add the food color on the top of the rice..

Cover it with a lid and let the rice cook, simmer the heat... and mix in the end when rice are cooked..:)
Top it up with Ghee...:)
